We are a San Francisco brewery producing our beers in small batches one beer at a time.  It is our goal to keep your taste buds intrigued by constantly producing different flavors.  To us, making the same 3-4 beers all the time would be boring.  We hope you feel the same way.  Our limited output and choice to abandon the common concept of a set production schedule will allow us to constantly experiment with different hops, barrels, and yeasts.

We are starting out small, with only four fermenters, so we will be limited to making four beers at a time, however we plan to make the most of this by splitting off portions of many batches into red wine, white wine, or bourbon barrels to enhance the flavor of the base beer.  Often these projects will consist of only a single barrel of beer being made (that’s only 53 gallons of beer; even less after the angel’s share is gone).

Since hoppy beers are the go-to beer for most people (us included), our plan is to always have several hop-driven beers on at a time.  Along with the hops we will have several Belgian-style Saisons (some funky, others not) as well as big, roasty stouts and whatever else we’re in the mood for.
